Peach Salsa

Equipment:

Ingredients:

  • 3-4 cups chopped peaches (just under 2 pounds)

  • 2 medium fresh tomatoes

  • 3/4 cup chopped red onions

  • 2 medium jalapeno peppers, seeded and finely chopped (leave seeds in for more heat)

  • 1/2 large sweet red pepper, seeded and finely chopped

  • 1⁄4 cup finely chopped cilantro (2 tbsp dried)

  • 1⁄4 cup white vinegar

  • 1 tbsp liquid honey (substitute with sweetener for keto)

  • 2 medium garlic cloves, finely chopped

  • 1 1⁄2 tsp tsp ground cumin

  • 1⁄4 tsp cayenne pepper

  • 2-4 tbsp tajin

Instructions:

  1. Use a veggie chopper to dice all ingredients quickly, except garlic & cilantro evenly.

  2. Toss peaches in vinegar once cut to keep them from browning

  3. Mince garlic consistently quick with a garlic chopper (you can also use this for pieces of ginger)

  4. Add all ingredients except cilantro, to a large bowl & mix thoroughly.

  5. Finely chop cilantro & gently mix just to incorporate all ingredients.

  6. Store in an airtight container for up to 5 days.
